Smoked Sausage and Potato Skillet

Looking for ideas for breakfast, brunch or dinner…This is it! You can add eggs to this dish or serve it with a piece of crusty Italian bread.

Smoked Sausage and Potato Skillet

Serves 4-6

1 uncured polish smoked kielbasa, sliced not too thin

3 bell peppers, diced

1 vidalia onion – diced

2 garlic cloves minced

2-3 medium organic russet potatoes, washed and diced

1 tsp smoked seasoning (see recipe below)

1 tbs. grape seed oil or olive oil

Aged shredded cheddar, for garnish

Directions:

In a deep skillet or cast iron pan on med-high and add 1 tbsp oil. Fry potatoes in batches (do not overcrowd pan)  until potatoes are well browned and cooked through. Season with smoked seasoning.

Remove potatoes from pan and set aside,  add the kielbasa sausage to pan and cook for about 3 minutes, until each side is golden brown. Remove sausage from skillet and set aside.

Next add peppers and onions to and cook until the onions golden and the peppers begin to carmelize on their edges. Add garlic cook another 3 minutes.

Return potatoes and sausage to the pan and mix well. You can add another pinch of seasoning if needed. Remove from heat and  garnish with shredded cheese. Serve immediately.

Smoked Seasoning Recipe 

1/4 tsp hickory smoked sea salt (San Francisco salt company brand or whatever store bought smoked sea salt)

1/4 tsp garlic powder

1/4 tsp fresh ground pepper

in a small bowl mix everything together.
