Christmas Eve tradition in our house has always been pizza and fish.  My mother and grandmother used to start early December 23rd and end into the evening making pizza.  Our dining room table was covered with bowls of proofing dough. My mother’s pizzas were always delicious! I continue to follow her recipe for my pizza sauce which is in my opinion, too die for! Jerk Chicken w/Rice and Peas(Beans)

In my cabinets you will find an array of different spices. I try not to let them sit too long, no one wants stale spices to season their food.  That being said,  I recommend using fresh herbs and spices when you can.  Since I have a lot of different palates to please in my home spicy, not spicy, sweet and savory etc… I like to play with seasoning mixtures to get the specific flavors I’m looking for.  Since jerk seasoning is spicy and I have a few non spicy palates to please, I used one jalapeño. I still ended up with tremendous flavor.  The rice and peas (beans)just brings this whole dish over the top!  The recipe below is the spicy version. Feel free to adjust the heat  however you’d like.

Rainbow Cookies

I would make sure to grab some of these first off the mountainous tray of cookies during a party. Otherwise they would be gone in minutes.  There’s something about the smell of almond paste that makes me happy and hair dye(but that’s for another blog 😃). After researching many recipes, here is a recipe I found that I really like! I prefer my rainbow cookies with apricot filling rather than raspberry.

Christmas Cantuccini (Biscotti)

These are another favorite of mine. Most people know these as biscotti (twice baked). Also known as cantucci an Italian almond biscuit that originated in the city of Prato.  In Tuscany it is referred to as cantuccini. This is my Christmas version of these delicious cookies.  You can also substitute the cranberry for dried cherries and almonds for pistachios.  I’m a dunker so these are great for holding up in coffee, cappuccino, lattes, tea or some vin santo!
