My family loves french toast, I just get sick of making it the same way every time.  I decided to utilize what I had on hand since the stores are still limited. The combination was quite delicious! You can stuff it with a cream cheese filling, serve it as a dessert and add a scoop of orange cream swirl ice cream. Possibilities are endless.  I just have to find a way to make a Keto version for myself.

KETO PIZZA CRUST

They don’t hold up, there’s no crunch or dough like texture, the pre-made frozen crust from the store is not carb friendly, it has rice flour in it.  This is a great recipe for people that have a gluten intolerance, or are watching their carbs. It’s a very quick dough to make. Don’t let the coconut flour turn you off, you will not taste it. Braised Beef with Onions and Garlic

With my family home on lockdown due to the Covid-19 virus, I am doing a lot of cooking. Cooking comfort food and food that’s healthy, easy to prepare with what I have on hand since the stores have limited items at this time.  This dish is very easy and is made in one pot with very little ingredients. If you don’t have wine, use broth. You can substitute whatever herbs you have on hand. You can turn the leftovers into several different meals. I made chimichangas with mine. This reminds me of when I was a young child and my grandmother would tell me why we shouldn’t waste and that it’s important to utilize what you can with what you have. She saved paper, she saved string and always made sure to never let leftovers go to waste.

Lavender Honey Chicken

Lavender has been known to remedy many different ailments such as, anxiety, depression, fatigue, insomnia and stress.  I love coming up with different ways to use it in recipes whenever I can. Especially in baking and various hot and cold drinks.   I think this recipe  has the best of both worlds, sweet and savory flavors of garlic, herbs and honey with a hint of lavender.   It’s a very delicious and comforting meal.

Polpetti Di Melanzane (eggplant balls)

This is a great alternative to meatballs.  My family loves them hot or cold. Serve this with a salad or vegetable and you’ve got a great meal! Not sure what kind of dish to bring to a party?
