I have been looking for a really good recipe for a low carb pizza crust that isn’t made with cauliflower. They don’t hold up, there’s no crunch or dough like texture, the pre-made frozen crust from the store is not carb friendly, it has rice flour in it. This is a great recipe for people that have a gluten intolerance, or are watching their carbs. It’s a very quick dough to make. Don’t let the coconut flour turn you off, you will not taste it. It definitely makes a smoother textured dough than almond flour. Give it a try, you won’t be disappointed!
Keto Pizza Crust
Makes 8 Slices

INGREDIENTS
1 1/2 cups whole milk mozzarella cheese, shredded
2 Tbs cream cheese, room temperature
2 large eggs, beaten
1/3 cup coconut flour
INSTRUCTIONS
Heat oven to 425 degrees. Line a pizza pan with parchment paper, sprayed with pam.
In a medium pot over low heat, combine mozzarella and cream cheese. Stirring constantly until everything is melted. Remove from heat.
In the same pot add eggs and coconut flour, stir util well combined.
Transfer the mixture to a board or bowl and knead with your hands for a minute or so until a dough forms.
Place dough onto parchment lined pan and take another piece of parchment paper sprayed with pam and place over dough. With a rolling pin roll out dough 1/4 to 1/2 inch thick.
Take a fork and poke holes throughout the crust to prevent bubbling.
Bake for approximately 12 to 13 minutes checking crust frequently to make sure it doesn’t burn and bake until golden brown. remove and top with sauce and your favorite toppings. Place pizza back into the oven and bake until cheese is bubbly and melted.
