Polpetti Di Melanzane (eggplant balls)

This is a great alternative to meatballs.  My family loves them hot or cold. Serve this with a salad or vegetable and you’ve got a great meal! Not sure what kind of dish to bring to a party? This is it!

 

To make polpetti you will need:

1 large eggplant, peeled and cubed
6 garlic cloves, 4 minced (for mixture) and 2 smashed (for flavoring the oil)
8oz fresh mozzarella, diced
1/2 cup pecorino romano, grated
1 egg
1/3 cup fresh basil, chopped fine
1 cup fresh bread crumbs
Sea salt and fresh ground pepper to taste
Extra Virgin Olive oil for frying
3 cups marinara sauce, homemade or Rao’s
In a large frying pan lightly coat bottom of the pan with oil and fry the eggplant in batches until golden. Set aside in a large bowl and season with salt and pepper (not too much salt because the pecorino is salty)
Add the breadcrumbs, Pecorino Romano cheese, mozzarella,

basil, garlic and egg and mix until it’s all combined.
Form into 1 inch balls.  Flatten each ball and fry until golden.
Then serve with sauce.
