If you’re a lover of anything coffee, you have to try this!
Whipped Espresso Parfait
2 TBS instant espresso
2 TBS sugar
2 TBS hot water
1/4 cup of half and half
Premium Coffee Ice Cream
Directions:
In a medium bowl whisk the first three ingredients until it forms stif peaks

Then froth the half and half until thick. If you have a frother wand or Nespresso Aeroccino Frother, these work very well.
In a small glass put two scoops of the ice cream then two tablespoons of frothed half and half and top with a heaping tablespoon of whipped espresso and enjoy!
**For a low carb version omit the sugar and use stevia or sugar substitute of your choice. Put a 1/4 cup of frothed half and half in a small glass and top with a heaping tablespoon and a half of whipped espresso (I like to put in one ice cube) and voila!
