Fish Tacos

I was happy to satisfy my husbands dinner request the other night.  It was something totally out of his comfort zone….Fish Tacos!  Everyone loved it!The lime and cilantro give it such a fresh taste. The creamy taco sauce really takes it over the top! BE9769FA-23AF-44C3-A469-9A0CBF3431D8.jpeg

Ingredients

8 – 6 inch flour or corn tortillas

Fish Seasoning:

1 1/2 lbs. cod or haddock

1 tsp. kosher salt

1/4 tsp. fresh ground pepper

1 tsp. ground cumin

1/2 tsp. ancho chili powder

1 Tbs. olive oil

1 Tbs. butter

Toppings:

1/2 small head of iceberg lettuce, sliced in thin shreds

2 avocados, sliced thin

3 campari tomatoes, chopped

1/2 small red onion, chopped

3/4 cup cilantro leaves, rough chopped

1 cup feta cheese, crumbled

1 lime cut into 8 wedges

Fish Taco Sauce:

1/2 cup sour cream

1/3 cup mayonnaise

1 garlic clove, grated fine

1/2 tsp. chili garlic sauce (or to taste depending on how spicy you want it)

Instructions

Heat tortillas on both sides in a pan on medium high heat. Remove, and keep them warm.

Make taco sauce: Add all ingredients in a medium bowl mix well until smooth and set aside.

In a small bowl mix dried spices, salt and pepper and rub on both sides of fish.

In a large pan on medium heat, add oil and butter and cook fish  turning once, about 15-20 minutes or until done.  Remove to a plate and flake fish in medium chunks

Assemble the tacos:

Add fish and toppings, squeeze lime wedge, top with cheese and drizzle with sauce.
