This is is a quick and easy low carb meal.
Keto Bacon Cheeseburger Casserole
Serves 4-6
Ingredients
1 pound grass fed ground beef
1 cup vidalia onion,chopped
2 garlic cloves, minced
1 teaspoon worcestershire sauce
2 oz cream cheese
2 eggs
2 tablespoons spicy brownmustard
1/4cup sour cream
1/4 cup half and half or heavy cream
1 cup shredded cheddar cheese divided
1 cup shredded white cheddar cheese divided
1 tsp Garlic powder
1 tsp paprika
1 Tbs ground porcini mushrooms
salt and pepper to taste
4 -6 slices uncured bacon cooked and crumbled, add more if you like!
2-3 kosher pickle, cut into small chunks
Instructions
Preheat oven to 350 degrees.
Place the meat in a skillet over medium-high heat. Add the garlic, onions, garlic powder, paprika, ground porcini powder and salt and pepper to taste.. Using a spatula, break the ground beef into chunks.
Add the worcestershire sauce and cream cheese. Cook until the meat is no longer pink and the cream cheese has melted.
Remove the skillet from heat.
In a medium bowl, combine the eggs, 1/2 cup shredded cheddar cheese, 1/2 cup shredded white cheddar cheese, sour cream, half & half and mustard.
Spray an 9×13 baking dish with oil or cooking spray. Pour the ground beef mixture into the dish. Add the crumbled bacon and chopped pickles throughout.
Drizzle the egg and cheese mixture on top.
Sprinkle the remaining 1/2 cup shredded cheddar and 1/2 cup shredded white cheddar cheese on top.
Bake for 15-20 minutes or until the cheese begins to bubble.
Let sit for about 10min before serving.
