Caribbean Rotisserie Chicken  

serves 4-5

5lb organic roaster chicken

1 lemon, cut in half

3 Scallions

3 sprigs Thyme

2 tsp. brown sugar

1/2 tsp. Lime zest

2 tsp salt
1tsp pepper
Instructions:
In a small bowl mix lime zest and spices together.
Pat chicken dry.
Sprinkle 1 tsp. if salt inside cavity of chicken then insert scallions, lemon and thyme.
truss chicken with kitchen twine tying legs & around wings keeping them from hanging loose so they do not burn.
Rub 1tsp all over outside of chicken.
Rub spice mix all over chicken. Place in a dish.
Marinate in refrigerator 1-2 hours or at least a half hour.
After chicken has marinated, prepare chicken for rotissing (if using a rotisserie kit), skewer chicken with rod, insert prongs into meaty ends and lock. Place in oven on rotisserie rack and roast at 350 degrees ( I do not preheat my oven when using rotisserie kit because I don’t want to burn myself.
If Pan roasting place in roasting pan in a preheated 350 degree oven and roast until internal temp is 165 degrees or 1 1/2 hrs until juices run clear.
When done, remove from oven and place on a cutting board covered with foil for about 10-15 min so juices settle in chicken.  Then serve  with rice or potatoes and vegetable.
