These are no ordinary burgers! Drizzled with a sweet port wine reduction and topped with melted white truffle cheese and truffle aioli. These burgers will be a hit for your next dinner, game night or whenever you want to take ordinary burgers to the next level.
Truffle Burgers
Serves 4
Ingredients
1 1/2lbs. Ground beef (preferably grass fed)
1 Tbs. white truffle oil
Pinch of ground sea salt
1/4 tsp. fresh ground pepper
4 slices truffle cheese (preferably Il Boschetto al Tartufo)
4 brioche or pretzel buns
1 1/2 cups tawny port
2 tablespoons white truffle oil, plus more to taste
1/8 teaspoon salt (preferably truffle salt)
Pinch of sugar
Aioli:
1/2 cup good mayonnaise (Hellmans)
1 Tbs. sour cream
2 -3 tablespoon white truffle oil
1 small clove garlic, grated fine
2 tablespoons fresh lemon juice
Make glaze:
Bring the port and sugar to a simmer in a small saucepan over medium-high heat. Cook until reduced and syrupy, about 10-12 minutes. Remove from the heat and whisk in the truffle oil, salt add more truffle oil to taste. Let cool slightly.
Make Aioli: mix the mayonnaise, sour cream, truffle oil, garlic and lemon juice in a small bowl. Refrigerate until ready to use.

Add truffle oil, salt and pepper to meat. Form the mixture into four 3/4-inch-thick patties, 4 inches each.
Heat heavy bottom skillet or cast iron pan. Add oil and butter. Add patties to pan. Cook until the bottoms have formed a brown crust 4 to 5 minutes. Flip and cook about 4 more minutes for medium. Add a slice of cheese on top of burgers and let melt, about 1 more minute; remove to a plate. Add bun cut sides down in skillet, 30 seconds to 1 minute.
Spread aioli on buns add burgers and drizzle with port reduction and cover with top buns.
