Yogurt Parfait

This was inspired by Ina Garten’s recipe (I love Ina!) I woke up early to make homemade granola only to find out that I didn’t have any oats or fresh fruit, so I improvised with what I had on hand.

If you have the time to strain your yogurt in a cheesecloth in a sieve overnight it’s worth the wait.

This was so creamy and delicious!

3 heaping tbs. Stonyfield Organic Greek Plain Whole Milk Yogurt

2 heaping tsp.  organic peach jam or preserves (or whatever fruit you like)

2 tsp. ground organic flax seeds

2 tsp organic unsweetened shredded coconut

In an 8oz glass spoon a heaping tablespoon of yogurt into the glass,  then spoon a heaping teaspoon of jam over the yogurt. Layer 1 tsp of the ground flax seed and then 1 tsp of shredded coconut. Start again with another heaping tablespoon of  yogurt and then repeat the same process.  If you use a larger glass just make sure to add more yogurt and extra teaspoons of flax seed and coconut.
