Peanut Butter Blossoms

IMG_4562Who doesn’t love chocolate and peanut butter?  The perfect combination!

 

Peanut Butter Blossoms

Yield approx. 5 dozen cookies

Ingredients

2 3/4 cups flour

1 1/4 tsp. baking soda

1/2 tsp. salt

1 cup creamy peanut butter

1 3/4 sticks butter, unsalted at room temperature

1 3/4 cups brown sugar

2 large eggs

1 TBS. vanilla

1 11oz. package Hershey Kisses, wrappers removed

Parchment paper to line sheet pans or Pam

Instructions

Preheat to 375 degrees

Line baking sheet pans with parchment paper or coat sheet pan with Pam .

In medium bowl combine flour, baking soda and salt and set aside.

In a Kitchen Aid mixer w/paddle attachment on medium high speed mix peanut butter and butter until smooth, about 1 to 2 minutes.

Add brown sugar and continue to mix until light and fluffy about 5 minutes. Add the eggs and vanilla and mix until incorporated. Add the flour mixture in two batches and mix on medium until incorporated.

Scoop out level tablespoons of dough, roll into balls and place about 2 inches apart on sheets. ( I use a small ice cream scoop for consistency so they bake evenly).

Bake 10 minutes or until cookies are golden. When done remove from oven and place chocolate kiss in the center of the the cookie then transfer to a rack to cool.
